Cecilia grew up in New Jersey with no wine background whatsoever. All that changed when her family visited California in late 2009 and fell in love with wine country. She moved to California permanently and start a wine brand in her family’s name. Attaching herself to anyone who would teach her, she quickly learned the craft and began winning awards for her wines. @enriquezwines was created as a passion project, combining the familys Mexican heritage and values with a love of fine wine. As a first generation Mexican-American family, they have succeeded through initiative, innovation and perseverance. Their mission is simple: to create wine worth sharing with family and friends while keeping true to the ideals their family have passed down through the generations. Choripan, an Argentine chorizo sandwich with chimichurri __ We enjoyed this sandwich, made by Chef Pablo Kim of Argentine Asado, at a recent food and wine pairing dinner. __ Chef Kim made the chorizo sausage from beef, pork, white wine and chile flakes, grilled it and served it in baguettes spread with his chimichurri sauce. He flavors the chimichurri with parsley, oregano, vinegar, garlic, chile flakes and other spices. He explained that he makes the chimichurri with canola oil and not with olive oil, because its flavor is too strong and would overpower the other flavors. His chimichurri is available in jars. __ The choripan was served with 2015 Esfuerzo Syrah from Herencia Wines. __ The food and wine matching dinner, which took place at Don Chente Bar Grill & Lounge, showcased some of the dishes that will be featured at Altameds triple celebration of Latin food and wine. @prospect_gourmand is a farm-to-table concept using local farmers market ingredients to enhance the palate with the flavors of the season. This eclectic American cuisine is balanced with French technique and seasonal California fare. Located in the city of Beverly Hills, Prospect Gourmand offers a casual ambiance, local craft beers and a California wine list with a European twist. Chef Isaac Gamboa trained under the aegis of Michelin-starred Chef/Restaurateur Michael Mina, working in several of Minas Las Vegas establishments including American Fish, Nobhill and StripSteak. First-generation winemaker Fernando Candelario started his journey in the 90s at Robert Mondavi, where he learned the secrets of wine. After a few years, he decided to change course. He joined T-vine Winery as a cellar master and winemaker assistant in 2001. Fernando eventually became head winemaker for T-Vine in 2007. By then, however, he had already begun making his own wine under the Voces label, established in 2002. In 2012, Fernando decided to focus 100% on Voces. Voces, meaning voices, is the manifestation of one mans dream of hard work, success and reward. This wine is made with heart and soul from high-end vineyards in Napa Valley. Small boutique batches of this intelligent and artfully crafted wine are created each harvest and meticulously cared for throughout the year. Voces wines are aged in American and French oak barrels for 12-18 months and then cellared to bottle age for an additional 2-4 years. Between the fresh bounty of the sea at @roeseafood and the distinct flavors of New Mexico at @panxacocina, owner and Executive Chef Arthur Gonzalez is bringing inspired cuisine and sustainably sourced ingredients to Long Beach, CA. Gonzalez and longtime girlfriend Vanessa Auclair, operations manager for Roe and Panxa, debuted Roe Fish Market in 2012, but it closed in 2015. The pair then shifted focus to Panxa Cocina, which opened in 2014 in Belmont Heights. In 1997, the year of their marriage, Rolando and Lorena founded their own winery and produced 200 cases of Chardonnay. In the last 20 years, they have built their dream winery @misuenowinery with love, passion and a deep understanding of the art and the science of growing grapes to produce craft wines rich in character and elegance. Because of his passion for wine and wine making, Robert Reyes of @reyes_winery envisioned having a small vineyard to produce a small amount of ultra-premium wine for family and friends. However, in 2002, when he purchased the beautiful piece of land where the vineyard is located today, the vision changed from a personal hobby to a winery. The 16-acre vineyard was personally planted by Robert Reyes and the Reyes family in April of 2004 and consists of five popular grape varieties: Cabernet Sauvignon, Merlot, Syrah, Chardonnay and Muscat. The first crop was harvested in 2005 and produced a very small amount. While the winery went through the rigorous permit process in Los Angeles County, the vineyard matured, and the quality of the fruit improved significantly with each subsequent vintage. This resulted in better, more robust and elegant wines. The winery has produced single varietals, blends and a great rosé as well as four award-winning dessert wines. Making ahi tuna tostadas __ Chef Bret Thompson of Pez Cantina made these delicious tostadas for a recent food and wine pairing dinner. __ He made avocado crema by blending avocado with labneh (Middle Eastern strained yogurt that resembles Greek yogurt), jalapeno, cilantro, garlic and lime juice. Then he spread it on the tostadas (crisp baked or fried tortillas). __ The chef tossed the ahi tuna cubes with chile puya oil, diced tomatoes and cucumber, and spooned the spicy tuna mixture on top of the avocado-spread tostadas. __ We Mexicanized a Japanese dish, he said. __ For garnish, he added toasted sesame seeds, crispy shallots and edible flowers. __ The tostada was paired with flavorful, refreshing 2016 Calayas Chardonnay from Malibu, which was a great match for the tostada. __ The dinner, which took place at Don Chente Bar Grill & Lounge, showcased some of the dishes and wines that will be featured at Altameds triple celebration of Latin food and wine. In the 1950s, @gallegoswiness Ignacio Gallegos Sr. settled in the heart of the Napa Valley and started a family legacy of farming some of the most prestigious vineyard sites in wine country. Today, his son Ignacio II and grandsons Ignacio III and Eric continue the legacy with their vineyard management company which started in 2008. Each harvest season, grapes from the vineyards they manage as well as the family estate vineyard in Rutherford, are hand-selected to produce the limited-production Gallegos wines. The Gallegos family truly believes that great wines begin in the vineyard. They take pride in their meticulous farming practices, from pruning in the winter to carefully selecting the fruit at harvest, through the winemaking process and all the way to bottling. ¡SALUD! El Floridita has gone by many names. The restaurant was first established in Havana, Cuba in 1820 as La Piña de Plata (The Silver Pineapple). Then, in 1898, it was renamed El Florida before its regulars finally christened it El Floridita. One of those regulars was Ernest Hemingway. The Floridita eventually became a haven for Cubas leading personalities - merchants, politicians and celebrities living in or passing through Havana. Several of Hollywoods greatest legends passed through the Floridita, including Errol Flynn, Ava Gardner, Gary Cooper and John Wayne. Hemingway had such an impact on this bodeguita that a bust in his honor was placed over his favorite stool when he won the Nobel Prize. To this day people still gather there for the excellent cuisine and the famous daiquiri. Still, the most popular reason people go is to absorb the aura and the mystique left by Papa. It is not El Floriditas intent to revive the old glory but to merely carry on the legacy here in Hollywood! Pairing food and wine: ahi tuna tostada with Chardonnay Wish I had this spicy ahi tuna tostada now! Its perfect for todays super-hot weather. Chef Bret Thompson of Pez Cantina made it for a recent food and wine pairing dinner. We Mexicanized a Japanese dish, he said. Chef Thompson tossed the tuna with chile puya oil, diced tomatoes and cucumber. Then he made avocado crema by blending avocado with labneh (Middle Eastern strained yogurt that resembles Greek yogurt), jalapeno, cilantro, garlic and lime juice, spread it on the tostadas (crisp baked or fried tortillas) and topped it with the spicy tuna mixture. For garnish, he added toasted sesame seeds, crispy shallots and edible flowers. The tostada was paired with flavorful, refreshing 2016 Calayas Chardonnay from Malibu, which was a great match for the tostada. The dinner, which took place at Don Chente Bar Grill & Lounge, showcased some of the dishes and wines that will be featured at Altameds triple celebration of Latin food and wine. The three festivals--Grand Tasting, East LA Meets Napa, and OC Meets Napa, will take place in Los Angeles and Orange Counties from July 26 to 28. Chef Adrianzens first big opening was Venice’s El Huarique back in 2013, which served the Peruvian answer to sashimi inside a cramped food stall on the boardwalk. After that, he bounced around for a while, opening the now-closed C-V-CHE in East Los Angeles, consulting as chef at Misky Misky in Covina, then spending a few months as chef at Picca in West L.A. and Máncora in the city of Alhambra. As with his previous restaurants, the star at Ceviche Stop is ceviche, which may as well be Peru’s national dish. A world away from Mexican-style ceviche, the Peruvian version includes cubes of fish, shrimp and calamari drenched in the famed sour citrus marinade known as leche de tigre, paired with oversized corn kernels called choclo and soft wedges of sweet potato.
