Gluten-free banana ➰ 2 bananas ➰ 3 eggs ➰ ½ cup of cashew, coconut, or almond milk ➰ 1 spoon of chia ➰ ½ cup of coconut oil ➰ 1 ½ cup of buckwheat flour ➰ 1 teaspoon of ground cinnamon ➰ 1 teaspoon of baking powder ➰ ½ teaspoon of baking soda 🥣 Mix flour, cinnamon, baking powder and baking soda in a bowl. Combine the bananas, eggs, milk, chia, and oil in a blender or electric processor until it has a creamy consistency (~ 1 minute). Mix the liquid and dry ingredients with a spoon. Pour over a mold with wax paper (I do not like aluminum foil because it looses many chemicals ⚠️). 🎛 Preheat the oven to 375 • F and cook for about 30-35min. It depends on the oven and the thickness of the mixture in the mold. Just introduce a knife and if it comes out clean, its ready ✅ ❄️ You can freeze some for about 2-3 months. 🍯 Do not add sugar to childrens food. Another point where different opinions are found. Some say that sugar can be offered from 1 year, others at 3 years. This is because it alters the taste buds, and they then reject other foods. NEVER give honey before the year. 👶🏼 Beginners: the recipe has egg, but you can find substituted in one of my posts about egg substitutes 👉🏼. Remember that allergens, such as eggs must be offered for 3 consecutive days to rule out allergies. The allergy can appear hours or days after the first contact with the food. 🥜 After I took the photo, I thought I could add some almond butter (allergen ⚠️) and strawberries 🍓. They were even more delicious,and we can offer good fats ✅. What else would you add to the bread?

• PREPARATION • Food prep isn’t just for the adults, I find that when I’ve prepped Byron’s snacks the night before my day is less stressful, rushed and there’s more time for the fun stuff. I am loving our @planetbox to help keep us organized. It’s design means no mixing of food, fits plenty of it and stays cool with the insulated carry bag. I definitely notice how it impacts my day when I haven’t organized anything for him. Now to just get better with my own! Unclear if this looks appetizing but 🤷‍♀️ Leftovers are so clutch on evenings when the last thing you want to do is get down and dirty with a meal made totally from scratch. Thanks to 1 hr on Sunday, my fridge was stocked with roasted squash and #grassfed chili. I like to stretch my animal proteins by bulking them with extra veggies so tonight all I did was add some chili in a pot, toss in chopped kale and allowed the kale to wilt while heating. I then topped a bed of arugula (always have washed greens in the fridge) with my #mealprepped goods 🤗

Easing my way back into my cooking routine after my peds boards yesterday. Didnt go grocery shopping this week, so used some Trader Joes wild Alaskan sock eye salmon from the freezer topped with Dijon mustard and a local raw honey, pairing it with these frozen roasted root veggies from Trader Joes. The frozen root veggies were a new TJs product for me.... not bad but they didnt crisp up as nice as fresh veggies. But Ill probably continue to stock it in my freezer for future last minute dinners/meal prep

But I’d put things up at the top that will make a BIG difference! . Here’s my Wednesday wellness tip of the day. . Say to yourself these two mantras all day long every single day... . “Water first” and “veggies most”. . Simple and obvious right?! 🤷‍♀️ . Totally! But do you do it? . I challenge you to focus on 2 things for the rest of this week starting right now... . 1. Drink 1/2 your body weight in ounces EVERYDAY. . It’s not that hard especiallynof you start with at least 2 glasses of H20 first thing in the morning before anything else enters your body and then just drink all day long- i like to have a room temp pitcher out and have big glasses before I sit down to eat anything!👍 . 2. Eat more veggies than anything else! . Want an easy way to figure out how your plate should look for every meal? . Breakfast- veggies 1/4-1/2 plate Protein- 1/4 plate Fiber rich carb 1/4 plate . Lunch veggies 1/2 plate Protein- 1/4 plate Fiber rich carb 1/4 plate . Dinner 1/4 protein 3/4 veggies . Wam. bam. Thank you Mam😉💪👍 . But I hear ya🙋🏼‍♀️. It@really is hard to eat enough veggies and nutrient dense food....I’ll be the first to say it’s HARD for the best eaters to get all the nutrients our bodies desperately need - that is why I’m so passionate about my superfood shake to give me that nutrition insurance but you need to make sure if you supplement- you are careful as there’s a lot of crap out there - you don’t need fillers- you just need the good stuff!! Sometimes we eat whole grain spaghetti, sometimes we eat spaghetti squash. We love both and we enjoy mixing it up so things don’t seem so boring all the time. ⠀⠀⠀ ⠀⠀⠀ Have a hard time getting your kiddos to eat veggies, try spaghetti squash and involve them with the cooking of it! It’s seriously SO easy and pretty tasty!⠀⠀⠀ ⠀⠀⠀ 1. Cut spaghetti squash length wise⠀⠀⠀ 2. Scrape out seeds ⠀⠀⠀ 3. Cover inside flesh with olive oil, salt and pepper. Flip upside down on plate. ⠀⠀⠀ 4. Place in microwave and cook for roughly 10-20 minutes!5. Let cool. You should be able to easy fork the flesh into small strands. Sounds crazy, but it’s real! This is where you have your little one help. Once the spaghetti squash has cooled, have your little one help fork the spaghetti squash out of its shell! ⠀⠀⠀ 6. 🌶 Craving nacho’s?! I’m a nacho/burrito/taco kind of gal. {🌮🌯👍🏾😁🤤 -know what I mean?} They are quick, easy, and the flavor combinations are almost endless. But tortilla’s and chips and taco shells aren’t generally made with great ingredients. So, while I appreciate the *crunch* of a good chip, which this recipe doesn’t have, I wanted to make a whole food version of nachos! - Introducing Nacho Potato Hash w/ Cashew Cheese 🙌🏽 👇🏻 (1) tbsp avocado oil (1) russet potato, diced (1/2) red onion, chopped (2) cloves garlic, finely chopped Veggie broth (low sodium) (1/2) can black beans, rinsed & drained (1) handful spinach, torn into pieces (1/4) cup red bell pepper, chopped (1/4) lime Salt, pepper, cumin seeds, mustard seeds, red pepper chili flakes, chipotle powder, cumin, & turmeric. - Heat avo oil over med heat. Sprinkle cumin seeds, mustard seeds, and little of the pepper flakes in oil (no need to measure - use your intuition). Once sizzling, throw in diced potatoes. Stir and coat potatoes with the oil. I like to layer my seasoning, so sprinkle just a little chipotle power and cumin powder and cook for about 10 minutes, stirring every few as needed. Add a little more cumin and chipotle powder, plus salt, pepper, and turmeric. Potatoes are probs soft, but not crispy, so turn the heat up a bit. Don’t walk away! Just stir every few minutes until they look good to you! (This is subjective. People are picky😉). - In a separate medium sized pan, heat enough veggie broth to mostly layer the bottom of the pan. Throw in onion and garlic, plus a little cumin powder, salt & pepper. Stir every few minutes until onions are soft and translucent. Add black beans and spinach. Stir up, turn heat off, and cover. This allows the spinach to wilt, which happens quickly. After 5 min or so, remove cover and sprinkle mixture with lime juice. - Plate potato, topped with mixture, topped with cashew cheese (DM me for recipe), raw bell pepper, and hot sauce if you want;) . . #cleaneating #eatclean #plantbased #healthylifestyle #cleanitup #nachos #cheese #nurse #nurselife #icunurse #neuronurse
