I love eggs, but sometimes I get sick of eating them every single day. #paleoproblems - So I’ll be enjoying spicy tuna cakes from @nomnompaleo Which, as a bonus, use canned tuna! I packed them in containers with kale-bacon-onion sauté for breakfast for the next few days, and I made a #paleo Cottage Pie for dinner later this week. I am loving the food out here so much! Going to a city where all the vegan food is labeled and you don’t have to ask for substitutions is like winning the lottery for me honestly. The weather isn’t too bad here either 😉 . . This might have been one of the best meals I’ve had in my life. True Food Kitchen in Scottsdale, AZ. Luckily they have 25 locations throughout the country and hopefully I can find one closer to home 🍋 . To drink I had a citrus margarita. My mom and I split roasted brussel sprouts, a butternut squash pizza with almond ricotta, carmelized onions, dried cranberries, and spinach, and a ancient grain bowl. Literally amazing I’ll be thinking of it forever. Its no surprise that holiday party food isnt always the best for us. BUT! There are ways to find some balance and still enjoy yourself!! Here are my best tips (feel free to save this post for later!) • 1️⃣Veggies first!! When rooting around the buffet, always add vegetables to your plate first! You dont want to run out of space for the good stuff! Eat that first to help fill you up on the most nutritious items. 2️⃣Eat off your plate! Its easy to down 5 rolls without even noticing, but if you eat off the plate that you make (as opposed to the table), and diversify the types of foods youre eating- youre bound to do a little better! 3️⃣Water water water!! I aim to have a glass of water in between drinks. Not only does it help you not get a hangover, but it slows down your drinks for the night, which of course is less calories overall. 4️⃣Watch your portions! During the holidays, we all want to try that tasty treat, or taste a new dish that someone has made with love. And we should!! But just watch your portions! We dont need 1/2 lb of Christmas fudge, but 1 or 2 bites is perfect. Save room in your stomach for your absolute favorite items, and leave everything else to small bites! • Hope this helps!! This is the way I got my kids to start eating #brusselsprouts (although Matteo is not convinced yet). We had a dish like this at a restaurant and they liked it, so I recreated it at home. It’s simply quartered Brussels sprouts roasted with a little olive oil and @a.vogel_canada #herbamare salt. The last 10 minutes of roasting I add chopped @mcleanmeats turkey bacon. • If you’re trying to get your kids to eat some more veggies or to try a veggie they say they don’t like add something to temp them. Cooking at home is great for a lot of reasons, but when you’re a household of one, it tends to come with a few challenges. For example, how much food do you cook at once? Do you cook enough to have meals for the entire week? Or do you make things from scratch every day? For me, the answer has always been...neither 🤷🏻‍♀️ I don’t like cooking enough to do it daily, but I also get reeeeally bored of eating the same thing several days in a row. So, I have to get creative! Used some of my leftover #paleochili (and froze some) to make #zucchiniboats - it’s almost like a whole new dish! Topped with @so_delicious #dairyfree cheese and baked in the oven...and adding a whole other vegetable to the mix! • • I am still really frustrated with my car situation and in the past, I would have dealt with it by grabbing some fast food (likely way more than one needs for one meal) and zoning out in front of the TV. There’s nothing criminal, imho, with an occasional fast food meal and a good ol’ Netflix binge - but it’s a slippery slope when it’s your main way of coping with stress...not gonna lie, building better coping skills took me quite some time (and that’s considering I am a psychologist!) - it can be really hard! But, it’s possible - so if you’re also working on changing some not so healthy habits and feel overwhelmed, don’t give up. You got this 🌿

Raw Veggie Wrap with Spicy Thai peanut lime sauce. Super easy to throw together! Loving these giant collard greens as my wraps! Inside I threw together some red cabbage, carrots, raw broccoli, cilantro, snow peas, and pea shoots, cut out the large center vein on the green, and carefully wrapped it up like a burritio. Then I mixed 1 tbsp peanut butter with 1 tsp Sriacha, 1 tsp coconut amino, and juice from about 1/2 lime for dipping! SUPER crunchy AND flavorful. 100% raw, gluten-free, grain-free, and vegan. 😎

One of my favorite things is to make homemade vegetable broth. I constantly keep a bag in the freezer to save any type of vegetable ends I dont use while cooking and once the bag fills up I throw it all in the Crock-Pot with some water and let all the nutrients and flavors cook into a broth. 🍅T O M A T E D E C O L G A R🍅 . Los tomates de colgar son una de las variedades de tomate que se conservan frescos durante meses tras haberlos recogido de la mata 👩🏼‍🌾 . Estos tomates me sorprendieron cuando compraba merienda🍇 en un pequeño súper que hay junto a la consulta . Ahí estaban, rodeados de alimentos de temporada: Escarolas Alcachofas Puerros...🌱 . I finally tried one of the @whole30 approved frozen meals from @walmart yesterday for lunch! It was pretty tasty and a great option for a quick, convenient lunch. It didn’t keep me full very long and the cost was $4.98 for one bowl. I wish there were more veggies in it, but I will definitely try out the other flavors. Also, can we laugh at how different my Bowl looks compared to the picture on the box 😂 Have any of y’all tried them out yet? And who is doing the #januarywhole30 this year?!

Switching up my ordinary steamed brussels sprouts by combining them with golden raisins and a squeeze of lime 🙌🏼 #EatMoreVeggies . . 1 tbsp extra virgin olive oil 2 cups shaved brussels sprouts 1 cup golden raisins Juice from 1/2 lime Salt to taste . . Heat olive oil in a skillet over medium heat. Add brussels sprouts and lime juice and sauté until sprouts start to turn golden brown. Add raisins and continue cooking until sprouts are tender. (roughly 10-12 minutes) Remove from skillet, season with salt and serve hot 😎

I hope that you enjoy this sprouting journey. 😃 🌱 STEPS: 1. Add one cup of black beans to your sprout ready mason jar. Beans expand so that is why I only use one cup. Make sure to check your beans so that there arent any pebbles, rocks, or shriveled beans and discard them. 2. Fill the Mason jar all the way with warm water. 3. Leave the beans soaking for 8 hours. 4. Remove the water by letting the water escape from the top. Add and rinse the water twice to remove the starch from the water. 5. When you have removed as much water from the jar tak a bowl and place the Mason jar diagonal. This will allow the excess water to drain into the bowl and light from the counter top to shine on all of the beans. 6. Water and rinse the beans twice a day and keep placing it on the bowl with the counter light shining on it. You should see your beans sprout in 2 to 3 days! How do your sprout your beans? Baked cauliflower baked ziti. I know, I know - another cauli recipe BUT I swear this recipe has been sooooo amazing to add to our usual lineup for dinner. 😋 Easy to make, healthy, and guess what - even my dad loves it. He went back for seconds. I call that a win!
