Sooo.. I had a bad lifting day yesterday ๐Ÿ˜… . My warm up weight felt super heavy, (as you can see from my facial expressions) haha. Also, I had a hip shift which was unusual ๐Ÿง . I know why tho๐Ÿ˜ . I usually have a full meal 30mins - 1hour before my workouts ๐Ÿ˜‹ BUT this time all I had was a banana ๐ŸŒ . Yesterday I went to the doctor for my thyroid check up. I was so excited to see how the doctor would react to my 20# weight loss. But to my surprise, they were more concerned with how my BMI is still OBESE, than how great I feel. I was told 175# is still too heavy. So, instead of dwelling on it, like I would have in the past. I went to the gym tonight and PRd my Overhead Squat with my body weight on the bar. ๐Ÿ’ช (160# in the first video and 175# in the second) I might be overweight, according to a textbook, but at least I can lift heavy. The dreamiest Buddha bowl! I roasted โ€˜les petitesโ€™ color carrots from Trader Joeโ€™s, broccoli, cauliflower and sweet potato seasoned in s&p and drizzled in avocado oil @ 400 F for about 30-40 mins. *I left the sweet potatoes in longer than the rest of the veggies All I did to make this bowl was use a portion of shredded chicken that I prepped in my instant pot and threw tons of the veggies I roasted in a bowl and whipped up a spicy tahini sauce to drizzle on top. THIS SAUCE IS EVERYTHING YOU GUYS๐Ÿ”ฅ Sauce ingredients: 2-3 TBSP garlic tahini 1 tbsp sriracha 1/2-1 tbsp Dijon mustard A littttle maple syrup to taste I keep this sauce refrigerated so I add water if it thickens up too much. Average calcium levels in 12 fresh vegetables (such as broccoli, cabbage, carrots, onions and kale) dropped 27%. Vitamin C levels dropped 30%. The difference is so dramatic that we would have to eat 8 oranges to get the same amount of vitamin C as our grandparents got from eating just one. This. Was. Bomb. !!! I do intermittent fasting throughout the week, so most mornings I dont have breakfast. Usually just a cup of black coffee, or my Slim. Drinking about 20 oz of water first thing in the morning, really gets my days going, especially if Ive planned a walk with my kids or a workout; by 9 am Ive already gotten half of my daily water intake done! Ive been seeing some delicious recipes pop up and in my newsfeed of overnight oats, and wanted to give it a try. This was so good! I thought it tasted just sweet enough by itself without having to add maple syrup, or I guess you could do Agave too, but to me, this was perfect as it was! ๐ŸŒˆ๐Ÿฅ™BOWLS itโ€™s whatโ€™s for dinner No cooking last night, just straight up assembling these gorgeous Italian Bowls. I have an Italian Jar Meal on my site you can checkout too, itโ€™s one of my favs to have hanging around. Always yummy ๐Ÿ˜‹ Made this one with a massaged kale salad base. The dressing was a quick creamy Italian from EVOO, red wine, mayo, Dijon, nutritional yeast, Italian seasoning, onion, garlic, chili flakes, s&p. Piled on all the fresh veggies here, banana peppers (make sure to read labels fro clean ones), uncured pepperoni and salami, olives (again read labels here for clean ones, many olives are soaking in bad oils). I basically build this thinking about an Italian sub, one of my fav all time foods. I try to bring in all that flavor. I nailed it here:) P.S. notice the size difference? Spent the evening prepping meals - butternut squash sauce on gluten free pasta with grilled organic chicken or with grilled wild salmon and prawns, and Chinese sausage and shiitake mushroom sticky rice. Okay itโ€™s official! I got my cooking groove back! Feeling more and more motivated to cook the foods I like while also considering my health and calorie intake. The best advice I can give for any individual who wants to lose weight is..... fuel your body with as much nutrients/calories as possible in the deficit scale rather than the least amount. Yes you can still lose weight with a lot of food in your body! Anyways, todayโ€™s dinner ๐Ÿด I made a avocado/hummus dip with lime juice, garlic salt, and hot red pepper seasoning. I also added cooked spinach to the dip. Made spicy ๐ŸŒถ shrimp ๐Ÿค with 1/4 cup of mixed rice and quinoa. Cooked some pumpkin and diced tomato.
