Bulk prepping, freezing, and learning to make meals easier for a busy family are what my cookbook is all about. I’ve found that most people don’t realize that there are numerous foods that can be bulk prepped and either frozen or reheated later, and sometimes those foods are even better the second time around. Each recipe states whether it can be frozen (and for how long) and includes suggestions for bulk prepping and meal suggestions. Implementing the techniques I describe in my book has made it possible for me to feed my family a nearly 100% made from scratch, wholesome diet. For example, we ate roasted potatoes yesterday morning, but I had prepped enough to last for 3 #meals. I simply reheated the potatoes in a pan on the stovetop with a little bit of olive oil and they’re good as new, maybe even a little better. Ingredients: 1½ cups reduced-fat (2%) plain yogurt 2 Tbsp. unsweetened applesauce ½ cup unsweetened bran cereal or granola ½ cup fresh blueberries ½ cup fresh raspberries . Instructions: 1. Combine yogurt and applesauce in a medium bowl; mix well. 2. Place one quarter of yogurt mixture in two bowls or yogurt jars. 3. Top with cereal, and half of the blueberries and raspberries. 4. Place remaining yogurt in each jar. Top with remaining berries. 5. Serve immediately.
