TGIF, Happy Seeds! - Heres the recipe for our King Oyster Mushroom Scallops for when you need a little seafood fix! These are MELT IN YO MOUTH tasty.  Check your local farmers market for their shroom selection - youll be amazed with what goodies you find! Enjoy and happy cooking! 🍄 - INGREDIENTS: 3-4 king oyster mushrooms (about 9-10oz), stems sliced into 3-4 big pieces, tops removed 1 tbsp. oil ‘Scallop brine’ — 1 cup water — 2.5 tsp kombu flakes — 2 tsp tamari — 1 tbsp lemon juice INSTRUCTIONS: 1. Gather & prep your ingredients! 2. Add the water, seaweed flakes and tamari into a small saucepan and bring to a boil. 3. Once it starts boiling, remove it from heat for about 15 min. 4. Stir in lemon juice and pour through fine mesh strainer to remove seaweed flakes. 5. Add the sliced mushroom stems to the sauce pan and marinate for 30 min. 6. Drain the mushrooms and save the marinade as it will add extra flavor at the end. 7. Add oil to a skillet over med-high heat. Add your oyster scallops and cook on each side for about 5 min or until golden and crispy. Drizzle the top with your brine mix or with a browned butter sauce. 8. Eat scallops solo or as a fancy-shmancy garnish to your favorite pasta or grain dish.

🎃 I finally made @wholefullys vegan pumpkin spice latte, and it.was.legit. I used decaf coffee instead of regular because too much caffeine makes me jittery. I also used my homemade vanilla, which is why you see the bean specks floating on top. 👏🏼 I love that this recipe is made with real ingredients and that the pumpkin flavor comes from actual PUMPKIN and SPICES instead of from a pump that tastes like chemicals. 🙃 Oh, and by the way, I always wondered if there was a weird texture when pumpkin was in a drink. But nope! Its totally normal. ☕️ Coffee mug & napkin gifted by @courtocopia; originally from @solegardenkp. 💕

I’m quite proud of myself - it’s only 10am and dinner is ready! We’ve been enjoying super early dinners all together as a family this week, but unless I get organized and cook early it’s hard to accomplish. I have an unusually light client schedule this morning, so figured I’d make a big batch of Fartlek chili from the #RunFastEatSlow cookbook (with a few modifications - I used yellow squash, kale, olives & garbanzo beans since that’s what I had). I love making chili in the fall and winter, as it’s packed with protein & veggies, makes for great leftovers, and freezes well (I usually freeze two individual portions as we quickly eat up the rest!). Off for my morning run now - enjoy this beautiful Friday!

When on vacation, your out of your routine & normal go to resources. While it would perhaps be easier to throw in the towel & eat whatever the resort is serving, I chose to hit the grocery store to get some staples for breakfast. For this trip, it’s the only meal I have total control over my choices so I’ll make smart ones that will fuel me properly . I grabbed a bag of hard boiled eggs & some grapes. When we got back to our resort, we found no salt or pepper in our room 😭. Hubby had a great idea to top the eggs with the olive hummus we bought and tada BREAKFAST! I’ve also packed some @perfectbar’s for the parks to keep me fueled . Off to Epcot 🙇🏻‍♀️✨

Les dejo la receta de las arepas que hice hace unos dias y que me han resuelto toda la semana !!! Son sencillas y ricas. AREPAS DE QUINOA . 👉👉1 taza de quinoa cocida. 👉👉1 taza de harina de maíz 👉👉3/4 taza de agua 👉👉1 cdita de chia 👉👉1 cdita de ajonjoli 👉👉Sal rosada. . 👉👉Mezclar todos los ingredientes hasta que la masa esté compacta , hazlo con las manos humedecidas para que no se te pegue en los dedos . Agrega mas agua o mas harina de maíz de acuerdo a la consistencia que va tomando. . Forma las arepas , puedes dorarlas primero en un grill y luego meterlas al horno en 350oF por unos 20 min aprox. . A mi me salieron 5 arepas 👌👌. . Rellenalas con lo que quieras , esta vez la mia llevaba 3 claras de huevo revueltas con champiñones y espinacas. . Es una manera sana de comerte un sandwich , puedes rellenar con pollo , carne , atún , lo que quieras !!! . . Ive been on a serious cooking/baking/trying new recipes kick these last few weeks! Ive loved learning more about how to cook paleo with @paleorunningmomma and @40aprons - they make it so easy and fun with their creative recipes (not to mention delicious). I wanted to try my hand at baking a sweet treat though now that I am off Whole 30 and have some added sweeteners back into my life. I found this recipe for paleo soft pumpkin cookies from @ambitiouskitchen and had to make them. First time baking any dessert with almond flour, coconut flour, coconut sugar, and coconut butter. It was fun to work with new ingredients that are also much healthier alternatives and see how they compare to the normal stuff. I opted out from making the creamy salted maple frosting since that has dairy in it and also rolling the cookies in more sugar. The first batch (not pictured) I accidentally baked into balls and they looked, smelled and tasted exactly like mini donut holes! These ones I remembered to flatten before going into the oven and they look more like cookies 😉I really liked them even without the frosting! Theres very little sugar in these so they arent too sweet and they almost are a little savory with all the spices in them, but I thought they tasted awesome. I remember sitting in a counseling appointment during a particularly hard season and getting some unexpected advice. I thought that my counselor was going to quickly try and find ways to help get me out of my struggle…I mean, thats the point, right? If it feels yucky, lets get out it! Well…he did the opposite. He told me that it may not be a bad thing to just sit in it for a little while, and try to feel/understand/and grow from the lessons being offered by the suffering. Since that time, Ive been learning how to get more comfortable staying put for a minute inside of the muck. Its natural to want to try and wiggle out of the discomfort, but theres something to be said for patience in the pain......what say you?

Bean burger, ey? I haven’t tasted one so maybe I’m gonna give this a go one of these days. 😊 . . . . . . . . @Regrann from @the_smallseed_ - Best tasting Bean burger I’ve made to date!😜 Full of flavour, packed with protein and super duper quick to make💫 I can’t tell you how disciplined I had to be whilst photographing these.. I was so damn hungry🤣 They disappeared pretty quickly afterwards 😈 Happy Wednesday to you all! . Recipe-makes 8 1 C Brown rice - cook using absorption method 100g walnuts- toasted in a pan 1 medium red onion- diced 1/2-1 Tsp hot cayenne pepper 1 1/2 Tsp smoked paprika 1 1/2 Tsp cumin powder 2 cloves garlic- crushed 1/2 Tsp liquid smoke 1 Tin (400g) Black beans 1 Tin (400g) kidney beans . Cook rice. Toast walnuts. In a frying pan place a little coconut oil, fry onion for 2-3 mins, add all the spices and garlic, cook until onion is translucent. Pulse walnuts in a processor until they resemble breadcrumbs. Now add the rice, onion mix, beans, liquid smoke and combine well. Place mixture into a bowl. Line a tray with baking paper and scoop out Aprox 130g of the mixture. Gently roll into a ball and flatten slightly on baking tray. Repeat until all done. Place under the grill for 6-8 mins on each side. Take out. Mash some avocado, place on bottom slice of each burger bun, layer with bean burger, sliced tomato, beetroot, lettuce and chipotle sauce/vegan mayo!! Great with some jalepenos too! I started playing with recipes in my home kitchen and tested them out on my friends and family. Honestly, the first batches were not that good...it took a while to perfect the Super Pop bar we have today. I started doing local farmers markets in Los Angeles and got into a few stores. A couple years later we are in over 60 locations nationwide. . Juggling motherhood while running your own business is a juggling act for sure but I wouldnt want it any other way. I am showing my girls the importance of hard work and living your dream! . . I am so proud of our products and how our fans respond to it. It is truly a bar/snack that everyone can enjoy. 💪🏼 Date Protein Bites ⏲ Under 10 mins These fully customizable date protein bites are SO GOOD and packed with lots of nutrients & (duh) protein. I put pretty much everything I love in these bites & its the perfect little snack to eat anytime. Also I just bought a food processor & I LOVE it. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Delicious Deets👇🏼 ▫️1/2 cup Raw almonds ▫️1/2 cup Medjool dates ▫️1/2 tbsp Reduced-fat peanut butter ▫️1 tbsp Chia seeds ▫️1.5 tbsp Cacao powder ▫️1 tsp Cinnamon ▫️2 tbsp Avocado oil ▫️1 scoop Unflavored protein powder ▫️1 tbsp Honey ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Pulse dates & almonds in food processor until blended together. Add in all remaining ingredients & pulse in processor until all is combined. Line any dish (I used a baking dish roughly 5x4? 🤷🏽‍♀️😅) with plastic wrap. Pour out mixture & use slightly wet fingertips to spread everything evenly. Then, go crazy with seeeeds! I topped mine with hemp, sunflower & pumpkin seeds. Let it sit in the refrigerator for 1-2 hours. Pull out the plastic wrap & cut into bite sized cubes! Store in the fridge in an airtight container. 🍅 Tomato Avocado Bruschetta ⏲ Under 15 mins | Serves 2 I made this delicious bruschetta the other day & paired it with my Basil Pesto Zoodles (recipe on my profile). It’s crispy, fresh & makes a wonderful side to some zoodles! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The goods 😋 ▫️5-6 1 slices French bread ▫️3-4 cloves Garlic ▫️1 Roma tomato ▫️1/2 large Avocado ▫️Less than 1/4 Onion ▫️1/4 cup Cilantro ▫️Lime juice ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Slice the french bread & brush on olive oil. Sprinkle a little of the chopped garlic on each slice & set aside the rest. Bake the slices at 350 degrees for about 5 mins (or until brown). In a bowl, mix remaining chopped garlic, tomato, avocado, onion & cilantro. Drizzle in some lime juice and season with salt & pepper. Take the bread out of the oven when ready & top evenly with the tomato mixture. 🍓 Berry Breakfast Parfait ⏲ Under 5 mins My messy but yummy breakfast for today! Created this layered parfait at home this morning & now I’m enjoying it at work. Super easy, customizable & of course delicious! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Layered in my jar👇🏼 ▫️Berries - strawberries, raspberries, blueberries ▫️Plain Greek yogurt (@heb) ▫️Honey almond granola (@bearnakedgranola) ▫️Raspberry drizzle (heat 5-6 raspberries in pan until liquid) ▫️Almond butter ▫️Continue layering these items until you reach the top! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Happy #humpday🐫 y’all!

🍜 Peanut Thai Noodles ⏲ Under 30 mins | Serves 4 This dish has got all the Thai feels & I am absolutely NUTS for it! The sauce is so creamy & blends all the flavors wonderfully. Great way to start off the week! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe 📝 ▫️1/3 cup Low-fat peanut butter ▫️3 tbsp Soy sauce ▫️3 tbsp Sesame oil ▫️4 tbsp Water ▫️2 tsp Honey ▫️1 clove Garlic ▫️1/2 tbsp Ginger ▫️8 oz Wheat spaghetti ▫️1/2 cup Shredded carrot ▫️1/2 cup Shredded cabbage ▫️3/4 cup Frozen edamame ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Peanut Sauce 🥜 Combine peanut butter, soy sauce, sesame oil, water, honey, garlic & ginger in blender until creamy. Combine cooked spaghetti, carrots, cabbage & edamame in large bowl. Pour peanut sauce & mix in.
