Dinner for hubby was an Assamese meal with a south Indian twist.😀 . 1.Since he is a vegeterian his meal had leftover rasam/saaru/mysore style rasam. 2.Urohi/sem bhaji/flat green beans/hyacinth beans/ sem ki phali , stirfry in mustard oil with spices. . 3. Assamse style xoriho diya lau bhaji or bottle gourd cooked with mustard seed powder, fennel powder,cumin powder,green chiliies and seasoned with mustard seeds,ginger and garlic,cooked in mustard oil. . 4.Assamese style Jika-bilahi bhaji or ridge gourd stirfry with tomatoes, spices cooked in avocado oil. . 5. Kodo Millet cooked with curry leaves to give it flavor. Green chilli and lime ,a must on my plate. . . Tonight a wholesome ,lowgi,nutritious, Assamese thali for this cold evening. . . 1.Omita-paleng xaakor aru masor jhol.Raw papaya,spinach halibut fish curry Assamese style. In a pot asked 1 tsp mustard oil,then chopped ginger,garlic, 1 green chili, then added cubed papaya.Sauteed for a few minutes and added 2 cups of water and boiled until fork tender,then added fish (previously browned in oil so it doesnt break when added to curry).Added 1 tsp of cumin-corriander powder,turmeric salt ,bring it to a boil(about 5 minutes so everything blends well),then add a cup of fresh spinch,chopped. Cook another minute to wilt the spinach and take off heat.Very mildly spiced yet super flavorful. . 2.Urohi/sem /flat green beans /hyacinth beans/ sem ki phali bhaji or stirfry in mustard oil with spices. . 3. follow @heathly4heather CAJUN SHRIMP TACOS WITH MANGO SALSA Made by ❤️ INGREDIENTS For Cajun Shrimp 1 lb large shrimp, shells removed 1 tbsp butter or olive oil 2 tbsp cajun seasoning (or to taste) juice from half a lemon For Mango Salsa 1 mango, peeled and chopped 1 cup cherry tomatoes, chopped juice from 1 lime 4 green onions, chopped 1 jalapeno, seeded and chopped ½ cup cilantro, chopped salt and pepper to taste For Tacos 8 6 corn tortillas 1 cup coleslaw mix INSTRUCTIONS To prepare the salsa toss all the mango salsa ingredients in a bowl and set aside until ready to assemble tacos. In a large skillet melt the butter or heat oil. Season shrimp with cajun seasoning and add shrimp to skillet. Cook until pink, shouldnt take more than a couple minutes. Turn off heat and squeeze half a lemon over the shrimp. To assemble tacos, start with coleslaw mix, shrimp then salsa. @heathly4heather @heathly4heather

Ingredients 1 lb boneless skinless chicken breasts, grilled 12 oz dry spaghetti of choice 12 oz grape or cherry tomatoes, halved 7 Tbsp olive oil, divided 1 cup (45g) packed fresh basil 2 cloves garlic, minced 2 Tbsp pine nuts Salt and freshly ground black pepper 1/3 cup finely shredded parmesan cheese, plus more for serving Red pepper flakes, for serving (optional) . Directions Preheat oven to 425 degrees. Prepare pasta in a pot of salted water according to directions listed on package, reserve 1/4 cup of the water before draining. Toss tomatoes with 1 Tbsp olive oil and season with salt and pepper to taste. Spray a baking sheet with non-stick cooking spray and spread tomatoes into an even layer on baking dish and roast in preheated oven 10 - 15 minutes, until soft. In a food processor pulse together basil, garlic and pine nuts until minced. With processor running, slowly pour in 6 Tbsp olive oil in a slow stream. Pulse until finely minced and well blended. Add in parmesan cheese, season with salt and pepper (about 1/4 tsp of each) and process about 1 minute longer. Toss drained pasta with pesto and a few tablespoons of reserved pasta water as needed. There would have been 2 big jars of apple sauce but a little person dipped into the bowl while I was putting the baby to bed 🙈 we are loving fresh homemade apple sauce made in the instant pot! So easy and so delicious. I grew up eating applesauce on the side with basically every meal, meat and potatoes, pasta, you name it, everything tastes better with a bit of apple sauce 🍎🤤 my kids like it mixed with chia seed and if I let them they’d eat the whole batch in one sitting!

Follow her INGREDIENTS: SKINNY HONEY LEMON CHICKEN INGREDIENTS: 1.5 lbs. boneless, skinless (raw) chicken breasts, cut into bite-sized pieces 3 tablespoons soy sauce (if making this gluten-free, be sure to use GF soy sauce) 2 tablespoons rice wine vinegar salt and pepper 1 tablespoon olive oil Honey Lemon Sauce (see below) optional toppings: toasted sesame seeds, thinly-sliced green onions, extra lemon zest, lemon slices HONEY LEMON SAUCE INGREDIENTS: 3/4 cup chicken stock 1/4 cup fresh lemon juice 3 tablespoons honey (or more/less to taste) 2 tablespoons cornstarch zest of 1 lemon pinch of ground ginger (optional: sriracha, for heat) DIRECTIONS: Combine the chicken, soy sauce and rice wine vinegar to a large ziplock bag, and toss until the chicken is evenly coated. Refrigerate for at least 10 minutes, or up to 8 hours. When you are ready to cook the chicken, drain and transfer it to a separate plate. Season the chicken on both sides with a few generous pinches of salt and pepper. And in a separate bowl, whisk the honey lemon sauce ingredients together until combined. Heat oil in a large saute pan over medium-high heat. Add the chicken and saute for 5-7 minutes or until it is cooked through and no longer pink inside, stirring and turning the chicken occasionally for even cooking. Transfer the chicken to a separate (clean) plate with a slotted spoon. Pour the (whisked) marinade into the empty saute pan. Cook over medium-high heat for 2-3 minutes, or until the sauce reaches a low boil and thickens. Add in some sriracha if you would like for extra heat, to taste. (Feel free to also season with extra salt and pepper, or extra honey or lemon.) Add the chicken back into the pan and toss until it is evenly coated with the sauce. Ingredients 4 (6 oz) boneless skinless chicken breast halves 1/3 cup olive oil, plus more for brushing grill 1 Tbsp lemon zest 1/3 cup fresh lemon juice 4 cloves garlic, minced (1 1/2 Tbsp) 2 tsp dried oregano 1/2 tsp dried basil 1/2 tsp dried thyme 1/2 tsp dried rosemary, crushed Salt and freshly ground black pepper Chopped fresh parsley, for serving . Directions Using the flat side of a meat mallet, pound thicker parts of chicken to even thickness. In a small mixing bowl whisk together olive oil, lemon zest, lemon juice, garlic, oregano, basil, thyme, rosemary and season with salt and pepper (about 1 tsp salt 1/2 tsp pepper). Place chicken in a gallon size resealable bag, pour in olive oil mixture. Seal bag while pressing air out. Rub marinade over chicken. Transfer to refrigerator and allow to marinate 2 - 5 hours (rotate bag and move chicken around halfway through if possible). Preheat grill over medium-high heat (to about 425 - 450). Brush grill grates lightly with olive oil. Place chicken on grill, close lid, and grill about 4 minutes per side, or until chicken registers 160 - 165 degrees in center of chicken on an instant read thermometer. Brazilian Shrimp Stew Good for a chilly night! Makes 4 servings Per serving ½ leanest protein 2 ½ vegetable servings 3 condiments 1 fat INGREDIENTS 1 1/4 lbs raw shrimp, peeled & deveined Non-stick pan spray ¼ cup green onion, diced 1 clove garlic, minced ¼ cup roasted red pepper, diced ¼ cup fresh cilantro, chopped (1) 14 oz can diced tomatoes w/ chilis 1 cup light coconut milk 2 Tbsp Sriracha hot sauce 4 teaspoons fresh lime juice ¼ tsp salt ½ tsp pepper INSTRUCTIONS Spray a medium saucepan. Saute onions for several minutes until translucent, then add the garlic and peppers and cook for several minutes more. Add the tomatoes, shrimp and cilantro to the pan and simmer gently until the shrimp turns opaque. Pour in the coconut milk and Sriracha sauce and cook just until heated through - do not boil. Add lime juice and season with salt and pepper to taste.
