You’ve heard the quote by now... “You can’t poor from an empty cup.” This quote was echoing through my mind all weekend. I got so caught up on the holiday hustle and bustle that I wasn’t taking care of myself. I don’t think I let myself fully recover from the respiratory infection I had. This stops TODAY. While Savannah was at pre school I FORCED myself to relax for 2 hours. There are still dishes to be washed, presents to be wrapped, shopping to be done, Christmas cards to be filled out... the list goes on... At the end of the day, if momma is not well, everyone suffers. I’m still learning to listen to my body, give myself a little grace and take some time to recharge.

These beauties were my dinner last night, lunch today. To reheat, I recommend placing a damp paper towel over the patty(ies), and putting in the microwave for about 1-2 minutes (it traps some moisture around them and protects them from drying out). These patties (slightly reminiscent of falafel) have very minimal ingredients, involve very minimal prep, and include some of my favorite ingredients. If you follow my Instagram/blog closely, you already know how damn easy bulgar is to deal with, and you also know how much I love chickpeas. In addition to eating these like a “burger”, you could use them as a salad topper, or break them up and eat them in a wrap with some tzatziki sauce, cucumber, and your favorite green(s). total time: 30 minutes 1. bring ¾ cup water to a boil, and pour over ½ cup uncooked @arrowheadmills bulgar wheat. 2. allow the water to absorb completely, about 25 minutes. 3. rinse 1 15 oz. can chickpeas, place in a large bowl, and mash until smooth. add 1 cup chopped scallions, 1 teaspoon cumin, ¾ teaspoon paprika, 1 large egg, 1 large egg white, and 1 tablespoon olive oil. 4. mix in the cooked bulgar. 5. shape into 4, ¾ inch thick, patties. 6. heat olive oil on medium heat, adding patties and cooking for 5 minutes on each side. 7. for the avocado mash, mash 1 ripe avocado with 1 teaspoon of garlic powder, and a pinch of kosher salt. 8. to serve: toast @traderjoes whole wheat English muffins as desired, and spread avocado mash evenly on the top bun(s) of each. . . . #ibroughtlunch #cleaneats #lunchprep #veggieburgers #healthylunchideas #healthylunch #vegetarianrecipes

Recipe by @delish Low carb Broccoli Cheesy Bread👀 . Ingredients: - 3 c. riced broccoli - 1 large egg - 1 1/2 c. shredded mozzarella ( you can use fat free) - 1/4 c. freshly grated Parmesan - 2 cloves garlic, minced - 1/2 tsp. dried oregano salt - Freshly ground black pepper - Pinch crushed red pepper flakes (optional) - 2 tsp. freshly chopped parsley . Directions: - Preheat oven to 425° and line a large baking sheet with parchment paper. Microwave riced broccoli for 1 minute to steam. - Carefully ring out extra moisture from the broccoli using paper towel or cheese cloth. - Transfer broccoli to a large bowl and add egg, 1 cup mozzarella, Parmesan, and garlic. Season with oregano, salt, and pepper. - Transfer dough to baking sheet and shape into a thin, round crust. - Bake until golden and dried out, 20 minutes. - Top with with remaining 1/2 cup mozzarella and bake until cheese is melted and crust is crispy, 10 minutes more. - Garnish with parsley and pepper flakes if using.

Another amazing health food restaurant date (and even better was with my mom) 🥰 . @rawandroxy was such a great experience as everything we experienced was nothing like I’ve ever had before! We got a tasting platter as we couldn’t decide what to order but I HAVE to go back and have a full portion of the raw “lasagne”, it was insanely delicious! Can’t believe a raw, cold and meat free meal can taste so convincingly like lasagne! And on top of the food being amazing the restaurant is gorgeous! Amazing morning 👌🏼

Busy weekend = No time to meal prep! ⏰❌🥗❌ ——————————————————— Although this could be a great opportunity to eat a naughty lunch, there’s no excuse! 💪🏼 - I popped down to M&S and Sainsbury’s on my lunch, purchased myself ready cooked vegetables! And some ready cooked chicken breast slices! 🥬🥦🍗 - Fresh vegetables are always the better option OF COURSE! However, times like this, you have to make most healthiest decisions when you’ve just got the use of a microwave! Although these vegetables aren’t raw and ready to cook from fresh, a ready cooked bag is a much better option than let’s say chips! Or a burger! ••Pesto Gnocchi•• • 1 package @traderjoes cauliflower gnocchi • 1-2 tbsp pesto (I use TJ’s vegan kale pesto) • handful of spinach • sliced mushrooms • parmesan (vegan if desired) Prepare gnocchi in a frying pan by adding a few tbsp water and a splash of olive oil and covering. I’m a separate pan with a bit of olive oil, add mushrooms and spinach. Once water has evaporated from gnocchi, add a little more oil and sauté until a little crispy and golden brown. Add pesto to mushrooms and spinach, then transfer gnocchi to the pan of veggies and gently stir. Quali sono i legumi che provocano meno gonfiore? • 🍡 Buongiorno a tutti!! ☀️👩🏼‍⚕️ Niente neve qui a Milano ma tanto freddo! ❄️ Oggi inizia la mia ultima settimana di lavoro prima delle vacanze natalizie!! 🎅🏼🎄 Sarò infatti disponibile per i nuovi appuntamenti dal 7 di Gennaio in poi! :) Questo è il mio pranzetto di oggi: farfalle integrali, piselli, lenticchie e peperoni! ❤️ Consumare legumi è molto importante: sono un ottimo alimento ricco di fibre, proteine vegetali, vitamine e sali minerali! Spesso però sono poco tollerati e possono provocare gonfiore e flatulenza! 👩🏼‍⚕️ Tra tutti, quelli più facilmente digeribili sono le lenticchie e i piselli! Se soffrite pertanto di gonfiore addominale, anziché eliminare del tutto i legumi, date qualche chances in più a quest’ultimi :)🍡 Un’utile strategia per ridurre l’effetto “pancia a palloncino” 🤰🏼🎈 può essere anche quella di frullarli e di consumarli come crema! 🍵

Some of us are lucky enough to have active jobs where we can move around. But the sad truth is that many of us sit at a desk for 8-10 hours a day with little activity and movement. Then we go straight home and sit at the table for dinner or relax on the couch reading or watching tv. With so much going on in our daily lives it seems tough to squeeze in some exercise or cook a healthy dinner. Luckily I’ve got some tips to stay healthy during the workday! 6 Tips to a Healthier Workday: 1. Park Further 🚘 Don’t pull into the closest parking spot to the office. Park some distance away so you get in some extra steps before and after work. 2. Break every Hour 🕺🏼 Get up from your desk every 90 minutes to do some exercises. Do toe touches, lunges or squats, anything that gets your blood pumping. I stagger out my printing so I walk up and down to collect it more often. 3. Snack Healthy 🍎🍌☕️ Office pastries and frappaccinos are the enemy! Store Healthy Bars and Herbal Tea in your drawers, so you aren’t tempted to grab those Friday donuts or splurge on creamy caffeine. Snacking healthy will also prevent you from binge eating come lunchtime. 4. Take Calls Outside 📱 Know you have a call coming up? Then grab your phone and take it outside- walk around the building instead of sitting at your desk. These little movements add up and keep you more energized and focused throughout the day. 5. Step It Up 📶 Say goodbye to elevators and escalators. The stairs are now your new best friend! I mean it is summer time, work your legs and booty! 6. Cube Buddy 🤝 Ask a co-worker to keep you accountable to your health goals. Mix up a Health Shake and use the extra time you saved at lunch to go for a walk. Shrimp + Avocado Taco Salad🍤🥑 . Delicious😋 or nah🤔 . 👉🏽 @losingweightmealideas 👉🏽 @losingweightmealideas - - makes 3 servings  Ingredients: 1 lb. jumbo shrimp, peeled and deveined  16 oz. chopped romaine lettuce  3/3 cup cherry tomatoes, halved  1 avocado, diced  Dressing:  1/4 cup packed cilantro leaves, roughly chopped  1/4 cup fresh lime juice  1/4 cup extra virgin olive oil  1 Tbsp raw honey  1/2 tsp chili powder  sea salt and pepper  Instructions: Combine the dressing ingredients in a food processor or blender and process until smooth. Place shrimp in a plastic bag, or glass bowl, then add 3 Tablespoons of the dressing and marinate in the refrigerator for just 10 minutes (no longer.) Reserve remaining, untouched dressing for the salad.  Heat a skillet over med-high heat, and spray it with avocado, or olive oil. Saute the shrimp in two batches to avoid overcrowding the pan, for 1-2 minutes a side, or until just  barely cooked through and pink.  Divide lettuce between plates and top it with avocado, tomatoes and shrimp.  Sprinkle with sea salt and the drizzle the remained dressing.  Mix the salad and serve immediately. Pescada no forno com batatas! Receita fácil, econômica, rápida e saudável... INGREDIENTES: Batata para assar; legumes à escolha: os meus foram cenoura e abóbora manteiga...mas podia ter sido espargos, couve flor, beterraba, chuchu... Azeitonas em rodelas, tomate desidratado (algum tomate desidratado é muito salgado); Azeite, pimenta preta, alecrim e sal marinho, alho esmagado, sumo de limão e chalotas em rodelas. Filetes de pescada. PREPARACAO: Temperar os filetes com sal, sumo de limão e alho esmagado ( pode ser alho em pó), com antecedência. Cortar as batatas e numa taça misturar os temperos ( alho esmagado, azeite, alecrim e sal). Colocar no tabuleiro...fazer o mesmo para todos os legumes. Levar ao forno. O peixe assa mais rápido por isso não é conveniente pôr no forno ao mesmo tempo que as batatas...quando o peixe for para o forno espalhar sobre o mesmo as azeitonas, o tomate seco e chalotas cortadas em rodelas. Os filetes não devem estar muito tempo no forno para não cozerem demasiado. Normalmente uso a actifry para assar o peixe...assim tenho a certeza de que o peixe não fica demasiado cozinhado. PEANUT BUTTER BLISS BALLS 🥜 YOU WILL NEED 1/2 cup of almonds 2 tablespoons of melted coconut oil 1 heaped tablespoon of natural peanut butter (I used @picspeanutbutter ) 1 cup of oats 1 cup of soaked and pitted dates Blend all ingredients, roll into balls and freeze for roughly 30 minutes Store in the fridge and enjoy 😊

Whole Roasted Cauliflower . ~~ Ingredients ~~ ● 1 head cauliflower ● ½ cup tahini (145 g) ● 3 tablespoons olive oil ● 2 teaspoons turmeric ● 2 teaspoons paprika ● 1 teaspoon garlic powder ● 1 teaspoon chili powder ● 1 teaspoon cumin ● 2 teaspoons salt ● 3 cloves garlic, sliced . ~~ Preparation ~~ 1- Preheat oven to 400°F (200°C). 2- Prep cauliflower by removing leaves and stem with a knife, then place on a parchment paper-lined baking sheet. 3- In a small bowl, whisk together tahini, olive oil, turmeric, paprika, garlic powder, chili powder, cumin, salt, and garlic. 4- Pour tahini mixture over cauliflower, using your hands to make sure entire head is covered. 5- Bake cauliflower for 1 hour and 15 minutes. Make a tent with aluminum foil and cover halfway through. 6- Cut cauliflower into pieces and then separate florets.By tastyvegetarian Share with a friend!👍🙂
