Prep each of the salad components, toss them in a large bowl but dont add your dressing to the entire batch. The way I do it, I portion a days worth of salad into another bowl and toss in the dressing the night before. Preserves crunch & lets flavors marry. The prepped salad mix can also be lightly sautéed as a side dish or tossed into your fried rice dishes or soups 🥗🍜🍝 . . 1 head of green cabbage, shredded 1 head of red cabbage, shredded, 4 large carrots, shredded 1 cup fresh green peas, steamed/boiled 1 cup fresh corn, steamed/boiled 2 cups red & yellow peppers, diced 2 cups green apples, diced 3 cups cucumbers, de-seeded & diced 1 cup cherry tomatoes, halved 1 cup celery, diced Optional: top with sesame seeds, hemp seeds,green onion, etc 🥗Dressing🥗 1 Tbsp Sesame oil 2 Tbsp Coconut Aminos (sub Soy Sauce or Tamari) 2 Tbsp Date syrup (sub brown sugar, maple syrup)* adjust to taste 1/2 cup Rice Vinegar *I like tangy dressings so start with 1/4 first) 1/4 cup neutral veg oil 1 lime, juiced 2 Tbsp nut butter (peanut/almond) 1/2 tsp coarse black pepper 1 Tbsp ginger & garlic, minced Add all ingredients to a blender and whiz for 10 seconds or use a lidded glass jar and shake until the dressing comes together. Happy Sunday friends x Recipe for about 20 large cookies: 200 gr ground almonds 50 gr spelt flour or buckwheat for gf 2 tsps ground cardamom Zest of 1 medium organic orange 1/2 cup dark maple syrup 4 tbsp date or coconut sugar (optional) for more sweetness 200 gr tahini Pinch of salt 1/4 c almonds roughly chopped for topping - preheat oven to 200*C and line a baking sheet with parchment or a silicone pad - add all ingredients to a large bowl and mix until well combined. With a spoon scoop equal amounts and roll I to balls in the palms of your hands. Place on the baking sheet with a little space in between, then press down until you have round cookies. Sprinkle on the chopped almonds and bake each tray for 10 minutes or until golden. Place them on a rack for cooling and continue with the next batch. WHAT I ATE, PLANTBASED : LUNCH 🌿 _ Simple, quick, nutritious lunch. This was filling & delicious. • Brown rice congee with steamed Bok Choy • stir fried Radish ( heat a little oil, add 1 chopped green chilli, 1/2 a chopped onion, sauté until aromatic. Add in chopped Radish, Salt & sauté for 5-7 mins. Turn off heat, serve ! ) • Spicy cucumber ( to the chopped cucumber, add a teaspoon of mild spicy chilli powder & salt. Mix well. Serve ) _ So simple, my goal is to be out of the kitchen & enjoying my meal as soon as possible. These easy dishes make that happen :) I’ve been feeling great so far this winter. My immunity has definitely improved over the year. Eating a balanced diet, not skipping meals & eating mostly home cooked has definitely made a difference. FALAFEL!! Tiene origen en la cocina árabe y es una especie de croqueta frita de garbanzos. Hoy les traigo la versión saludable del falafel 💃🕺. Cómo se consume 🤔? Típicamente se sirve en un pan de pita pero tmb se puede servir al plato acompañado de ensalada. Otra opción, ideal para esta época del año, es en versión mini para una picada acompañado de alguna salsa, es un bocadito que se puede agarrar con la mano. Ingredientes para 20 mini falafel: 🔸200 gr garbanzos secos 🔸¼ T harina de arroz o la harina que quieras pero que sea bien fina 🔸2 cebollas de verdeo o ½ cebolla común 🔸condimentos (curcuma, comino, sal, pimiento) 🔸puñado de perejil o cilantro 🔸¼ T agua 🔸 Opcional: sesamo para afuera Procedimiento: 1️⃣Dejá los garbanzos en remojo por 12 horas. 2️⃣Descartá el agua, enjuagalos con la ayuda de un colador y si querés mejorar la digestión del garbanzo le podés sacar la piel. 3️⃣Procesá los garbanzos, la cebolla, el perejil y los condimentos hasta formar una pasta. 4️⃣Sacá la pasta de la procesadora y a mano incorporá la harina y el agua. El agua agregala de a poco para no pasarte, si te pasas simplemente agregá más harina. 5️⃣Dejá reposar la mezcla por 20 minutos. 6️⃣Formá bolitas, aplastalas para darles forma de croqueta, pasalas por las semillas de sésamo y listas para ir al horno!! 7️⃣En una asadera con apenas de aceite para que no se peguen, poné los falafel y llevalos a un horno a 180 °C. SALMON & PARSLEY Balls: -perfect for lunch,dinner,supper, OR snack..! . INGREDIENTS: . • 12 ounces organic wild caught salmon. • 1/4 cup red onion, diced. • 1 egg. • 1/2 a lemon, zested and juiced. • 1 tablespoon green onion, chopped. • 1 tbs fresh parsley, chopped. • Pinch of salt and pepper. • 1 tbs coconut oil. . METHOD; Preheat oven to 350 degrees F. Mix all ingredients, (except coconut oil) together until well incorporated. Form into 1-2 inch balls (makes about 20). Add coconut oil to a baking pan, and lightly roll the salmon balls until coated. Bake for 20 mins. Enjoy!. . Have a great day.. :-) . . Smakelijk! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingrediënten (voor 2 personen)⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 mango ⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 2 eieren ⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 160 gr havermout ⠀⠀⠀⠀⠀⠀⠀⠀⠀ - zout ⠀⠀⠀⠀⠀⠀⠀⠀⠀ - olijfolie ⠀⠀⠀⠀⠀⠀⠀⠀⠀ - toppings: granaatappelpitjes, frambozen, mango, yoghurt… ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Bereiding 1. Schil de mango, en snijd het vruchtvlees van de pit. Meng de mango in een blender of met een mixer met de eieren, de havermout en een snuifje zout tot een glad beslag. Het beslag zal er heel dik uitzien, maar dit is geen probleem! Hierdoor zullen ze namelijk net heel makkelijk in vorm blijven. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2. Verwarm wat olijfolie in een koekenpan en schep wat van het beslag in de pan. Ik gebruikte een ijslepel zodat mijn pannenkoekjes even groot waren. Strijk ze rond met de achterkant van een lepel. Zet het vuur niet te hoog. Als de ene kant goudbruin is gebakken, draai de pannenkoeken dan voorzichtig om met een spatel. Bak totdat het beslag op is. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3. Last week was extremely hectic, and at 6pm yesterday I fell asleep on the sofa and was dead to the world until 8am this morning. ~BAKED DONUTS~ It has been a long time since Ive eaten a donut. I tried for the first time to make baked donuts by myself and its very good I have to say, way better than I thought. They dont has any filling because I didnt want to add more calories and for my opinion, the topping is enough :) I made a few kinds of toppings, each donut has a different one: The one thats above: Dark chocolate + Bamba. VEGAN BUTTERMILK FRIED CHICKEN 🍗 By bosh.tv INGREDIENTS: - 200ml cashew milk -100ml of vegan yoghurt (ideally cashew based, needs to be thick) -1.5tbsp of lemon juice -1tsp salt -500g oyster mushrooms 150g plain flour -¼ tsp of freshly ground black pepper -½ tsp cayenne pepper -½ tsp of smoked paprika -½ tsp of garlic powder -vegetable oil for frying . Method 1. Combine the cashew milk, yoghurt, lemon juice and salt, whisk well to incorporate. Allow to rest for 5 minutes. 2. Place the mushrooms in a bowl and cover with the buttermilk marinade. Allow to rest in the fridge for 2-3 hours. 3. Place approximately 2cm of vegetable oil in a wide heavy based pan and place over a medium heat. Test the oil is hot enough by placing a cube of bread in the oil, it should brown quickly. 4. Combine the flour, black pepper, cayenne, paprika and garlic powder in a bowl and mix well. 5. Remove the mushrooms from the fridge. Place each mushroom in the flour mixture and toss well until very well coated with oil. Repeat with all the remaining mushrooms. 6. Place the mushrooms in one layer in the pan (this may need to be done in batches), be careful not to crowd the pan. 7. Cook the mushrooms for approximately 8-10 minutes, using tongs to turn regularly. They should be golden brown on the outside. If the oil is getting too hot and starting to smoke decrease the temperature. 8. Remove from the pan and place on clean kitchen paper to remove any excess oil. 9. Serve immediately with a side of chips and ketchup. Share with a friend!☺👍
