Egg white pizza 🍕 🍕🍕🍕🍕 Total cal = 148 🍕🍕🍕🍕🍕 . Ingredients and method: . - Heat a table spoon of water in a small non-stick fry pan (you can use oil if u prefer) . - Add 60g of shredded butternut squash (18cal), heat, on the hob until tender and steam off some liquid . - Add 100g egg whites (48cal), and black pepper and mixed herbs to taste - Heat on both sides until the whites are fully cooked (it should hold together and flip with a spatula when it’s cooked) -Take off the heat and add chosen toppings, I used: - 100g tinned chopped tomatoes (21cal) with chilli and paprika powder mixed in - 60g shredded cabbage (pre-cooked) (18cal) Then, - Slice and add 1 babybel light cheese (48cal) - Sprinkle with black pepper and chilli flacks (1cal) - Place the fry pan under the grill and toast until the cheese starts to melt - Eat and enjoy!!! . This is just an example of what ingredients and quantities I used, obviously the veg in the base and the toppings can be changed to suit your own preferences. Vegan tofu based curry to warm your soul as its gets colder and colder. 🍂🍁🍂🍁🍂 Recipie: 1 c pumpkin puree 1 block of firm tofu pressed and cubed 1 small onion 1 c peas 1 c carrots 1 1/2 c coconut milk 1 tbsp aminos 1 tsp oil 2 tsp garlic powder 2 tsp curry powder 1/2 tsp ground turmeric 1 tsp ground ginger 1 tsp cumin powder 1/2 tsp ground cinnamon 1/4 tsp ground nutmeg Saute onions in oil for 5 min, then add carrots, tofu and seasonings. Saute for an additional 10 min. Add water if need to keep from burning. Add pumpkin, almond milk and peas. Bring to a simmer for 5 to 10 min. 🍁🍂🍁🍂🍁🍂 Recipie yields about 4 to 6 servings. TORTINI ZUCCA E RICOTTA per 1 persona: - 80 g riso basmati - 200 g zucca Delica (pesata da cruda) - 50 g ricotta magra - 100 g albumi - 1 cucchiaio di parmigiano ed un po’ di olio extra vergine Lessare il riso al dente e poi mischiarlo con la zucca Delica cotta al forno e schiacciata con la forchetta, ricotta ed albumi. Formare i tortini (usare i pirottini in silicone) aggiungere a piacere un po’ di parmigiano sulla superficie ed 1 cucchiaino di olio. Cuocere in forno a 180 g per circa 30 minuti (gli ultimi minuti con funzione grill). . . Today I made a delicious lunch: Pumpkin patties with basmati rice and ricotta cheese! Making them is easy! PUMPKIN AND RICOTTA CHEESE PATTIES for 1 person: - 80 g basmati rice - 200 g pumpkin Delica (weighed from raw) - 50 g light ricotta - 100 g egg whites - 1 tablespoon of Parmesan cheese and a little extra virgin olive oil. Boil the rice and then mix it with the Delica pumpkin, baked and crushed with a fork, ricotta cheese and egg whites. Form the patties (use silicone cups) add a little parmesan on the surface and 1 teaspoon of oil to taste. Bangers & Mash 400 calories Serves 1 —-~—-~—- INGREDIENTS: •150g Lean minced Pork •50g Shallots •25g Mushroom •150g Potato •25g Carrot •50g Brussels sprouts •50g Cauliflower •25g Sliced Onion •Fry Light •Rosemary •Thyme •3 Garlic clove •Coriander •Cambridge golden vegetable flavouring PREPARE THE SAUSAGES: Mix together 25g diced shallots, Rosemary, Thyme, one garlic clove and a pinch of Coriander and fold into 150g lean minced pork. Cover and refrigerate for at least ten minutes. PREPPING THE GRAVY: •Chop 25g shallots, 25g Mushrooms, 50g Potato into small pieces and Place into a saucepan with 150ml of boiled water. •Add 1 levelled tsp of Cambridge golden vegetable flavour to the water. •Add two minced garlic cloves and fresh or dried rosemary to the saucepan and simmer until the vegetables are soft. •set aside until you’re meal is ready to serve. •Peel and Chop 100g of Potato and boil on a low to medium heat in water. Season the water with 1/2 tsp of Cambridge golden vegetable flavour. •Meanwhile, Using your hands form the pork mix into sausage like shapes and preheat the griddle or frying pan using 4 sprays of frying throughout the cook. •Begin to steam the vegetables and on a low to medium heat and begin to cook the sausages, turning them regularly to prevent them from burning. •When the sausages are almost ready, slice 25g of onion and add to the griddle/frying pan using another spray of fry light. •Remove the Rosemary stems from the ready made gravy and transfer the gravy mixture to a blender. Blend until smooth. •Return the gravy to the saucepan to reheat, adding a little more water if necessary. •Drain and mash the potato. Venison Chilli....a delicious one pot wonder at 200calories/ CWP step 2. (Inspiration from @thyme.2.cook ) . Ingredients: Homemade Chilli Seasoning (1tsp cumin, 1tsp corriandar, 1/2tsp garlic powder, 1/2tsp onion powder, 1/2tsp paprika, pinch of cinnamon, 1/2tsp chilli powder, 1/2tsp oregano), 20g shallots, 60g tinned toms, 1tsp veg flavouring, 96g Venison, 7g quark, 29g black eyed beans & 34g kidney beans. . . Method: Sealing the meat in a dry pan, then sprinkled most of the spice mix over the meat. Once sealed transfer to an oven proof dish. Cook the shallots in a few sprays of spray oil, then add the tomatoes, veg flavouring and 200ml water. Once boiling transfer to the pan with the meat. Cover and cook for 3- 3 1/2 hours, untill the meat has softened. Then add the beans and cook for another 30minutes.
