I have gotten so many messages about this recipe. I made it last night and Rodney was blown away. It is a LEGIT keto recipe that doesn’t take in any way, shape or form low carb. Rodney even said “this is the best almond flour has ever tasted.” ⠀⠀ What is the secret recipe?! Mayo!! Not even kidding you! I love mayonnaise, like believe it is God’s condiment 🤣🤣🤣 but now I know it is a gift from above when it makes a low carb chocolate cake even better! ⠀⠀ Recipe below makes 1 serving ⠀⠀ 2 1/2 tbsp almond flour 1 1/2 tbsp cocoa powder 1/2 - 1 tbsp sweetener of choice 1 1/2 tsp baking powder 1 1/2 tsp water 1 egg yolk 1 tbsp mayonnaise 10 sugar free chocolate chips ⠀⠀ Sift almond flour, baking powder & cocoa powder together in a mug. Add sweetener and mix together. ⠀⠀ Add water, mayo and egg yolk. Mix well. (I use a spatula to ensure I get it off the sides of the mug.) ⠀⠀ Push chocolate chips in center of batter and let sit for 2 minutes. ⠀⠀ Microwave for 45-60 seconds. ⠀⠀ I top it with whipped cream but warning, if you are super impatient like me and put your whipped cream on top of the hot cake your cream will completely melt so give it some time to cool LOL. ⠀⠀ Enjoy!

I was craving risotto so made a cauliflower rice version with loads of spinach and mushroon and it did not dissapoint! 👌 ▫️ I didnt measure anything, just sort of went with it 🤷‍♀️ but started by sautéing celery and garlic in butter. Then added the mushrooms (small package) and cooked for about 5 minutes. I set that aside then cooked the cauliflower rice in some more butter, lol, and seasoned it with salt and pepper and a bit of parmesan. Once that was cooked I added back in the mushroom concoction and threw in a bunch of spinach. At that time I added in a couple tbps of cream cheese and a splash of heavy cream and let it all mix in and cook for a few more minutes. ▫️ Try it!
