⭐️ LEMON CHICKEN & CAULI RICE ⭐️ Quick easy nutritional (and most importantly) delicious dinner! What you will need (for 4) * 4 skinless boneless chicken breasts * Cauliflower rice * Salad garnish of your choice (I used rocket, spinach & watercress) * Juice of one lemon * Paprika, dried oregano & herb mix (tsp of each) * Two baking potatoes (optional) Method 1️⃣ slice down the side of the chicken breast horizontally til nearly all the way through and open up (like a book) 2️⃣ place all 4 on a plate/tray 3️⃣ in a bowl mix the lemon juice and herbs/spices (you can add whatever spice/herb you like also) 4️⃣ pour oven the chicken breasts 5️⃣ allow to marinade for at least 5 minutes 6️⃣ heat a griddle pan to a high heat. Drain the remaining juice from the chicken and cook on each side for around 3 minutes (or until cooked through) 7️⃣ serve with you cauliflower rice & garnish! I opted to serve mine with baked potato slices as well for an extra filling meal! Thinly slice your potatoes and place in a tray, spray generously with coconut oil spray & add salt. Bake in the oven at 180 for around 30 minutes or until brown.
