This week’s sourdough bake. Came out ok but not what I was hoping for. This one was a slight fail. I was experimenting with a warmer cold proof at about 52f overnight and it went a bit over. Of course baked a little flat on top and a little more sour than I like - still completely edible. Ferment was already about 5 hours and had a 75 min warm proof. I was hoping to give the bacteria a chance and see how it affects the dough but the yeast was still kicking the whole time. It was actually overflowing the banneton. Reason for the experiment is I noticed my starter was active in the fridge at 34f and usually grows ~30% after 2 days but my overnight retard basically just sits there. Going to try in 40f range next. Mix was my usual except had to add AP when I ran out of BF. 70% BF, 18% spelt, 6% rye, 6% AP, ~83% hydration

400g Loaf 84%hydration 320g KA Bread Flour 40g KA Whole Wheat Flour 296g Water 80g Levain (100% hydration) 8g Salt Autolyse 1 hour Add levain and hand mix Hold 30mins at 80f then add salt and mix again until full gluten development Coil fold at 90, 150 and 210 minutes 2 hr untouched bulk Shape and place into banneton retard in fridge (38f) for 12 hours. Bake directly from the fridge in a covered preheated (500f) cast iron skillet for 20 mins. Remove cover and bake an addition 15-25 minutes. Let cool 2 hours before slicing.

Pair of Italian style semolina (durum) loaves, naturally leavened of course, with sesame and fennel seeds. Bulked for about 5 to 6 hrs, proved for about 2 hrs. Probably should have waited longer, with possibly more stretch and folds? The oven spring was still decent though, the crust is great and the crumb is very good, though Im sure it could be better. Still failing and scoring. Tastes great though! Maybe I shouldnt put myself down too much. Tips on how to shape and score?

Ive talked with so many people who feel guilty about throwing out there discard starter when doing their refreshing. I thought Id share 2 suggestions to help you make use of your discard without tossing it. First, dry it out. Spread it very thin onto plastic or parchment and let it air dry. Keep it in a cool dry place and you can use it to create a new starter without the long waiting period. The other thing I do, not pictured here, is make a discard jar every week which is keep in the fridge and then on the weekends I have enough to make sourdough pancakes or waffles. You could also use it for pretzels, pizza or crackers. So, Im not quite sure but I believe we need to take into account the amount of flour and water in our starter when calculating our dough. If we were to use 80g of starter at 100% hydration, that would mean we have 40g of flour, and thus, those 40g count towards the autolyse - is that right? And I cant remember if I took that calculation into account with the calculator on my website.... 🤔

Did not expect it to be so hard cutting into a loaf on camera! Tried out my Røde VideoMic Pro so do not miss out the SOUND. Love the cracking sounds (and our four year old daughter if you listen closely). Same dough formula as previous posts - 85% hydration, 30% whole wheat (freshly milled Emmer 20% + Ölands wheat 10%). Not as open as I would really like but still… can’t complain! This time 3h autolyse, Rubaud mix 10+5 min (resulted in great smooth dough) but maybe a fraction over proofed. Bulk 5 hours, bench 35 min and proof 35 min in room temperature (22-24°C) before over night retardation in fridge, 3°C. Not the open crumb I was hoping for, but it’s a still delicious cornbready loaf. Something was off with my formula or perhaps it was an under active levain... Regardless i clearly misread the first dough. And If I revisit this one again, I’m using at least 9 jalapeños! Loaf 20 - the companion loaf to loaf 19, but without salt. Identical in every other way, insofar as I could control it. 75% hydration, #bobsredmill ap flour, 500 gm total weight. It rose in a bowl on my counter alongside loaf 19, recieved the same stretch and folds, and was baked in a Dutch oven next to loaf 19 at the same time. Its a boule instead of a batard because I only have one banneton of each shape. The ovenspring was noticeably less, the dough felt looser, it was harder to shape, and didnt taste great.

This weekends sourdough experiment. This time I didnt repeat last weeks autolyse before adding levain because it didnt seem to make a big difference for me, and I dont think my current formula accounts for it well. I did however get a longer bulk fermentation and a bit longer RT proof before the cold proof overnight. Also used a much younger levain. Finally, added some asiago and fresh rosemary on top of the two batards for a punch of flavor.
