Thai Coconut Shrimp Soup🍤 . Don’t let the simplicity of this recipe fool you – this is one flavorful dish! It’s spicy, sweet and tart, with divine bites of buttery shrimp. Thai food is filled with fantastic flavors that require some interesting ingredients (like fish sauce!) Don’t be intimidated by the new ingredients, these are necessary to create the perfectly Thai experience of this delightful soup!! . 😊Ingredients: For the Cauliflower Rice . •1 head cauliflower •1 teaspoon olive oil •salt and pepper . For the Soup •1 teaspoon coconut oil •1 large shallot, sliced •1 tablespoon fresh garlic, minced •1 tablespoon fresh ginger, peeled and minced •1 tablespoon lemongrass, minced •4 cups broth (chicken or vegetable) •2 cans (13.66oz) coconut milk, unsweetened and full fat •¼ cup fish sauce •2 tablespoons lime juice •⅛ teaspoon Liquid Stevia •½ pound large shrimp, peeled and deveined •1 thai chili, thinly sliced into rings with seeds •1 cucumber, halved lengthwise, seeded and sliced into half moons •1 red bell pepper, seeded and diced •¼ cup fresh basil (for garnish •1 lime, cut into wedges (for garnish) . 😋Directions: 1. For the Cauliflower Rice: Wash the cauliflower, discard the leaves, and chop into small pieces. Grate the pieces with a food processor. In a large skillet heat the coconut oil over medium. Add the shredded cauliflower. Sauté for about 5 minutes, until tender. Season with salt and pepper. 2. For the Soup: Place the coconut oil in a large saucepan over medium heat. Add the shallots, garlic, ginger and lemongrass. Sauté, stirring often, for 5 minutes, until soft. Avoid browning, to keep your soup color bright white. 3. Add the broth, coconut milk, fish sauce, lime juice and stevia. Bring to a simmer and cook for 5 minutes. 4. Stir in the shrimp and chili rings, simmering until the shrimp are just cooked, about 2 minutes. Avoid overcooking the shrimp, to prevent them from becoming tough. Remove the soup from heat. 5. Off the heat, add the cucumber and red bell pepper. Place a scoop of cauliflower rice in each serving bowl and ladle soup over it. Garnish with fresh basil and lime wedges. Enjoy! 🍽

The first step into the gym was the best thing I’ve ever done in my life. Fitness is amazing, not just for your health but everything in general .... I’ve met so many people who taught me so many things , and I’ve made some friendships in the gym that will last a lifetime just by asking them “hey can I jump into ur set real quick...” This is a transformation from freshman - senior year (currently) . Looking back I’ve learned so much about my body; within 2 months of working out I got insanely shredded ... but not a lot of strength... basically a skinny boy six pack (abs don’t count when u just starve ur self ) . Went from lean, to bulky, to idk what , to lean to bulky now . I’m never gonna stop and will forever remain a natural. Anyone reading this , I suggest you take a step into the gym and turn it into your second nature . You will thank me later :)

When your teaching takes a detour you hope students are with you. Today was one of those days that getting to the gym was a silly mess. I felt pretty junky off the bat, then I forgot that we left my diaper bag at friends, leaving me praying to the 💩 gods Chance could make it through my gym sesh. Next I realized I left my water bottle at home and I practically drink my body weight in water during my workouts. Not off to the greatest start and I swear I would’ve forgotten my head if it weren’t attached. So my workout suffered...but for only a minute. I forced myself to change my frame of mind. ⚠️⚠️Can you emphasize your quads or your hamstrings on a leg press?⚠️⚠️ • Idk why my legs looks like twigs in this post🤷🏻‍♂️. They are actually my best body part😂😂! • • Of course you can! And here is how! Obviously you can’t ‘isolate’ your quads or hams without both of them working, but you can put more tension through one or the other. • • HAM EMPHASIS(1st video): To put more tension through your hamstrings, focus on putting your feet as high and wide on the foot plate as you can without your pelvis shifting/moving. • • QUAD EMPHASIS(2nd video): To put more tension through your quads, focus on getting as much knee flexion as you can(hamstring on calf). You can accomplish this by keeping your feet as low as possible on the footpad without your ankles coming up! • • Try these the next time you want to focus more on your quads or your hams next leg day and let me know how it goes🔥🔥
