Freeze the fresh meat overnight before starting with the recipe. Take it out 1-2 hours prior. Store parsley and scallion in the freezer too (in an airtight container) before using. . Put onion and garlic in the tray, top with isot and spices. Pour one teaglass of cold water all over but do not start mixing or kneading anything (to get a nice, rich color out of isot first). Add tomato and pepper paste next. Refrigerate this mixture for a few hours. . Combine bulgur with the cooled mixture from the refrigerator. Add some crushed ice cubes while kneading. Once all ingredients are fully combined, knead the mixture for twenty minutes. Kneading for a long time is very important to get a paste like texture. . Filling: 4 big sized potatoes, 1.5 glasses milk, 1 tsp salt, 1 tsp black pepper. . . Boil and mash the potatoes. Combine with milk until smooth. Season with salt and pepper. Place the first yufka sheet and brush it with oil. Place the second yufka on top of it. Divide the filling in three portions and spread the first one on this layer. Put the third sheet of yufka, brush it with oil and use potato filling again. Repeat the same steps for the fourth yufka sheet too then roll the pastry into a log. Put in the freezer for 3-4 hours. Cut into one fingerthick slices. Arrange on a baking sheet with parchment paper. Brush eggyolk on the pastries and sprinkle sesames on top. Bake at 180 degrees celcius until goldenbrown. Topping: Dust with powdered sugar or serve with strawberries, bananas, honey, ice cream etc. . . Direction: Divide the eggyolks and eggwhites. Beat eggwhites using an electric mixer on high speed. Add in 1 tbsp sugar while it is slowly getting stiff. Mix until you can turn over the bowl and the beaten eggwhites stay in place. Once it is done, whisk the eggyolks this time with 1 tbsp sugar, pinch of salt and 1 packet vanilla sugar. Whisk the mixture for about a minute. Pour in the milk and add the flour. Mix again. Fold in the beaten eggwhites next and do it gradually. Fold it in the same direction. Add 1 coffeespoon of butter in a nonstick pan. Set the stove to medium heat (close to low heat). Add small portions of batter in the pan as shown in the video above. Close the lid of the pan and waut for two minutes. Add some more on top of the batter in the pan and wait for 1-2 minutes more. Do this for a third time but add just a tiny amount of batter. Close the lid again and wait for 1-2 minutes more. Turn over the pancake after that and bake the other side for 3-4 minutes. I am a day late to do this but reposting this recipe for aşure/ashure/ashura today. This dessert is always prepared in big amounts and distributed to the neighbours, friends and relatives. 🙂 . Aşure by @masmavi3_mutfakta : . . 📍She used a small bowl for the ingredients which is 500ml (~17 oz) in size. . . Ingredients: 1.5 bowl wheat, 1 bowl beans, 1 bowl chickpeas, 1 bowl peeled almonds, 1 bowl seedless raisins, half bowl dried apricots, 1/4 bowl dates, 3 cinnamon sticks, 1 bowl sugar, 1 glass freshly squeezed orange juice, 1 tbsp orange zest, 2 coffeespoon starch. . Topping: Coconut, crushed hazelnut, pomegranate, walnut. . . Direction: Soak wheat, beans and chickpeas overnight. The next day, boil rinse them with water again and boil the beans and chickpeas in a pot filled with water. Drain and rinse again to get rid of the yellowish color. Rinse the wheat then empty in the pot and boil. Do not rinse or drain the wheat after boiling. Youll need its liquid for taste and consistency unlike the previous process. Put the almonds in a pot next, fill with water and bring it to a boil. This way you can peel them easily too. Meanwhile, let the raisins sit in hot water for 20 minutes and rinse. Take out your biggest pot now and throw in the wheat, beans, chickpeas, thinly chopped dried apricots and dates, orange juice, orange zest, cinnamon sticks and raisins and fill it with water which covers the ingredients about 10cm more. Put it on the stove. Bring it to a boil then reduce to middle heat and cook for 25 minutes. Remove the cinnamon sticks in 20. minute and stir in the sugar right after. Dissolve starch in 1 teaglass of water and slowly pour into the aşure too. Cook for 5 more minutes after that. Ingredients: 2.5 glasses lukewarm water, half glass lukewarm milk, 1 tbsp dry yeast, about 1 tbsp salt, 1 tbsp sugar, 7-7.5 glasses flour. . Topping: 400-500 gr ground beef, 3 long green peppers, 2 onions, half bunch parsley, 1 tbsp tomato-and 1 tbsp pepper paste, 3 tomatoes (use two if they are big), 1 teaglass oil (use less if your meat has a high fat content), ground black pepper, red pepper flakes, 2-3 cloves garlic, salt. You can also use allspice and cumin. . Direction: Put milk and water in a bowl. Add yeast and sugar and leave it to rest for five minutes. Gradually add the flour, add salt and knead a slightly sticky dough. Make sure to knead the dough for a long time, that is the most important part. Cover the bowl and leave the dough to rise for about an hour. In the meantime, prepare the topping: Place all ingredients except the meat in the food processor and blend. If you dont have one, just chop them into tiny pieces and grate the tomatoes. Combine the mixture with the meat. Cover it and put in the fridge. Flour your worktop.
