GINGERBREAD FAT BOMBS 💣. ::: Ingredients: 2 cups almond flour 2/3 cup @lakanto monk fruit sweetener (can sub coconut sugar) 1 teaspoon ground ginger 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 1/4 teaspoon sea salt 3 tablespoons MCT oil (can sub coconut oil, melted and cooled) 3 tablespoons melted ghee 1 tablespoon pure maple syrup 2 tablespoons unsweetened almond milk 1 teaspoon organic molasses Instructions: Add all of the dry ingredients to a medium sized bowl and mix to combine. Stir in the MCT oil (or cooled coconut oil), ghee, maple syrup, milk and molasses to form a thick dough. Using a tablespoon, scoop out a heaping portion and roll into in a ball. Sprinkle with a little extra cinnamon. Store in an airtight container in the refrigerator for snacking or a delicious dessert! Chocolate pancakes for the second time this week 🍫🥞 these little cakes were so easy to make and even easier to eat 😉 all I did was take some paleo pancake mix and added some dark cocoa powder to the batter before cooking. I cooked them in unrefined coconut oil which makes them crispy and adds a hint of sweetness! I cooked some bacon in a skillet (my favorite!) and added a handful of raspberries to complete this meal 👏🏼 I definitely still believe that any day that starts with chocolate is the best! If you’ve been following along in my stories, you know that there’s been a major cauli gnocchi shortage in DC over the past month, so I was excited to find out that my mom has been hoarding three bags of it in her freezer (no cauli gnocchi shortage problems in Boise! 🙌🏻) Cooked up two bags for the fam tonight (there’s a crispy gnocchi tutorial in my stories), and paired it with grilled asparagus (topped with parmesan — always!) and honey garlic chipotle salmon for an easy dinner ☺️. - #whatsonmyplate: honey garlic chipotle salmon 👉🏻👉🏻*recipe* 1) in a bowl, combine 1 tbsp. honey (I used manuka), 1/4 tsp. chipotle chili powder, 1 tbsp. melted ghee or butter, a punch or salt + a punch of pepper. So I’ve recently had some of you asking me to share more easy meal ideas/what do I eat in a day. Well I’m here to tell you it can be super simple and although it’s not always pretty/perfect I try my best! 😅 I’ve pure together a “what I ate today” post so you guys can get an idea of what a typical day for me looks like/hopefully get some inspiration! (Note: Emerson eats basically the same things and I eat with her. I find this helps her eat better!)👇🏻 Let me know if this helpful and I’ll post more! Happy Friday! 😄🙌🏻 .............. 1️⃣ Breakfast: 2 eggs + mashed avo on top of @canyonglutenfree gluten-free bread 💯😋 2️⃣ Snack: black coffee + scoop of @furtherfood collagen (use code HAPPYHUNGRYYOGI10 for a discount) and an @rxbar bar 💪🏻 3️⃣ Lunch: @bobsredmill quinoa + tomato sauce + black beans and olive oil sea/salt roasted broccoli (all ingredients I had prepped/leftover from other meals-a great way to use up stuff in the fridge!) 🤓 4️⃣ Snack: celery sticks + @justins cashew butter (you can prep these jars ahead of time for an easy/on the go snack!) 🏃🏼‍♀️ 5️⃣ Crock pot baby potatoes with chicken (cook potatoes on high for 2 hours, add chicken breasts + fresh thyme + fresh rosemary + sea salt + pepper + garlic powder + 4 tbsp @vitalfarms grass-fed butter. Cook for an additional 2 hours.) Served this with some sautéed asparagus. 👌🏻🍴
