FOOD DIARY 💁🏼😍 If you ask me for only one tip on how to eat healthy and clean and be consistent with it, I tell you to keep your meal plan full of food you already know and like. I don’t go crazy with ideas and recipes every week as I think having one totally new meal per week is enough. I do have a bunch of my favorite options and I mix them throughout the days. Adding one new meal every week will let you build over a few months quite a big food base. And then it’s easy to mix and match because you are familiar with nutrition values of your meals and you can easily swap them depending on your current needs 🤗 Here is my food diary with a few of my meal staples. What I had: 1. 🍎 Breakfast - protein oatmeal bowl topped with strawberries, banana, raspberries and peanut butter. 2. 🍎 Snack 1 - protein smoothie and some cashews on the go. 3. 🍎 Lunch - my favorite sushi - salmon cream cheese avocado rolls. 4. 🍎 Snack 2 - corn tortillas with grilled chicken, avocado, onion, tomato and cheddar cheese. 5. 🍎 Post-workout - @womensbest vanilla whey protein. 6. 🍎 Dinner - basmati rice with home made spicy chicken curry (chicken, zucchini, yellow and red bell pepper, tomatoes, coconut milk, cashews). Total of 2199 calories 📝😁 I had my upper body session today and I also went hiking and I burned 633 calories together 🏋🏼‍♀️😅!!

Aloo Gobi matar masala is mildly spiced curry in a rich tomato onion based gravy along with these three veggies. Puree is made by blending together boiled n cooled onion, tomatoes, cashews, garlic , ginger, red chillies together. Later tempered in mustard oil with cumin seeds, bay leaves, cardamom, finely chopped onion, followed by potato, cauliflower, green peas in the same order. After the veggies are sautéed n roasted well, dry masalas like turmeric, red chilli powder, garam masala, coriander powder, salt are added. Then add the ground masala, let it cook in low flame. Finally add kasuri methi and garnish it with coriander leaves! Steak & Veggie Stir Fry with 0 Carb Noodles🥢 . Found this Skinny Pasta @sprouts and have been dying to try it . Found the stir fry recipe online and tweaked it just a bit- added the noodles & more spice 🔥😁 . I chopped and prepped all the ingredients yesterday. So all I had to do was throw it all in the wok, 10 minutes boom dinner! . Super simple after a long day (group class with my girls this AM, work, then a quick leg workout this PM) Thank goodness for my Ketones, they kept my going all day long ⚡⚡ . First of all. Thank you all again for all the love, baby vibes and juju, texts, DMs. It was something I needed to let out and put out there. I am putting it out into the universe that we are ready for Baby K and we will enjoy the process 😉 . . . Now onto these not #tacotuesday enchiladas. I always stray away from enchiladas thinking they are too much work but seriously these babies were easier than tacos tonight. How I did it. . . Enchiladas for two: Crock pot 1lb chicken breast in 1/2 cup bone broth and 1/2 can of enchilada sauce (to lazy to make and couldn’t find the right peppers) on high for 4 hours. Pull out and shred. Heated up 6 @sietefoods tortillas on a cast iron about 10 seconds per side. Open a can of hatch Chiles and a can of sliced black olives. Spread some red enchilada sauce on baking pan (I used my mini @lecrueset). . . Layer some Mexican cheese. Add shredded chicken, hatch chile, sliced olives as you wish. Roll and place seam side down. Keep going until the pan is full. Then drizzle the rest of the enchilada sauce on top. Add more cheese if pleased and top with olives. Bake at 350 for 7-8 mins until cheese is melted. Top with sliced avocado and wait for the compliments to roll in. Seriously guys it was so easy and my hubby wish I made more. Good thing we still have leftover shredded chicken for tomorrow.

You know when something feels far away?! Maybe it’s the the certification, the degree, the happy relationship, the badge of self-Love, the way we wish, dream & hope our lives to be — one day. For me, the scariest moment was the moment I stashed away my dreams, desires, needs — or even worse, the moment you stop dreaming/having hope/or your desires at all. But why? Well apathy & stagnancy go hand in hand — for a reason. When we don’t have momentum, or support, or self-belief — having dreams, desires and hopes can be too painful. What I mean is that this reality (as is) is so far from the one we desire that our minds go, “why bother?” — enter cognitive dissonance & shut down. Now don’t get me wrong, I am in no way saying this path is easy — that climbing up Maslow’s hierarchy of needs to the top >> to self-expression & meaning >> is a cake walk. In fact, I’m asking you how bad do you want what you say you want? What conditioned decisions & beliefs are in the way? I’m asking you to believe in you again. Because at the end of the day, that’s what matters. Take one step today that moves you closer to what you’re here to do. If even just asking yourself this question, “what lights me up in this life?” It’s not that you don’t have it in you - it’s just that sometimes you have to open to other choices, different paths that you may not have expected & new possibilities. Would you eat these as a side or have them as a snack at a party? Whichever way you eat them, they are AMAZING!! I guarantee you won’t be able to have just one…🥔🥔 - N x . Crispy Parmesan Roasted Potatoes . INGREDIENTS 750 g / 1.5 lb baby potatoes , halved (about 3.5cm / 1.75, 20 - 24 potatoes) 2 tbsp olive oil , plus more for drizzling Parmesan Mixture: 1/2 cup / 50 g grated parmesan , the sand-like type (or finely fresh grated) 1/2 tsp garlic powder (or onion powder) 1/2 tsp dried oregano or thyme 1/2 tsp paprika 1/4 tsp salt (I use table salt, leave out to lower sodium) 1/2 tsp black pepper Dipping Sauce (Optional): 3/4 cup plain yoghurt or sour cream , or a combination of both 1/4 cup finely chopped green onions/scallions , plus more for garnish (or chives) . DIRECTIONS 1. Preheat oven to 200C/400F. 2. Mix Parmesan Mixture in a bowl. 3. Drizzle oil in 22 x 33cm / 9 x 13 glass baking dish (Note 2). Tilt pan to spread all over the base. 4. Use a spoon to scatter the Parmesan Mixture over the base. Spread as evenly as you can. Once sprinkled, do not touch - dont try to spread it. 5. Place potatoes cut side down, pressing firmly. 6. Optional: drizzle top of potatoes with a touch of oil or spray with oil, then sprinkle with salt. 7. Bake potatoes for 35 - 40 minutes or until they are soft and the parmesan crust is deep golden (you can check through the glass!) 8. REST for 5 minutes before flipping - this helps the parmesan crust adhere better. 9. Serve with Dipping Sauce, if using, and sprinkle over extra green onions if desired. Serve as a side dish or as nibbles!

Took me just 5 minutes to put together this tasty meal. 🍽✨ Asparagus, grilled chicken, arugula, diced peppers, and onions. Tossed a little cheddar cheese on top, and it’s finished! ✅

This dish may not look appetising but it tasted amazing. I made a white pasta sauce with cannellini beans, nutritional yeast, garlic & @san_elk vegetable stock and added zucchini, carrots & mushrooms for extra fibre and had it with zoodles and some air fried sesame crusted prawns. I’m still in a bit of shock about how this SO easy and quick dinner turned out! With the weather a bit cooler today I was craving some fall flavors! 🍁🍂 This entire dinner was on the table in less than 20 minutes thanks to @traderjoes #whatsonmyplate : @traderjoes frozen sweet potato mash with crispy sage, steamed Brussels sprouts that I warmed and crisped up in my @lodgecastiron and @traderjoes frozen wild caught jumbo sea scallops. For the scallops I let them thaw on counter for an hour prior then cooked in @chosenfoods blend oil for about 3-5 minutes on each side. The sage was sautéed in this oil as well. This blend is also such a great option for baking!

On average, 20-30g per meal. - Here are a few protein OPTIONS: Meat Poultry Seafood Beans Eggs Dairy Nuts Seeds - That’s A LOT more than just protein powder, huh? - Now, I will say having protein powder can be very beneficial. - 1. If you can’t get enough protein in for the day, 1 scoop of protein powder gives you 20-24g of protein. 2. If you’re on the go, a protein shake is better than nothing at all. 3. The MR. smoked a brisket for the 1st time ever tonight and it turned out amazing. It was good and fatty with lots of flavor and not dry at all. Also had sausage and veggie foil pack with a bunch of stuff in the fridge that needed to be cooked 😆 squash, zucchini, onions, mushrooms, jalapenos and lots of butter 🤤 oh and see that @ghughessugarfree sauce in the back?
